Whether spring, summer, autumn or winter: an onion cake is suitable for every season. When it's cold, it's great when served warm, and when it's cold, it makes a wonderful main course when it's cold. It doesn't matter whether it's for a family meal or a party buffet - everyone loves onion tart. But only if it comes along juicy and fluffy. Let's take a closer look at how this works.

The dough

This onion cake does not consist of shortcrust pastry, but yeast dough. For this I have slightly modified my pizza dough recipe. I used melted butter instead of olive oil. Why? To put it simply: In my opinion, olive oil goes less well with onion tart than butter.

The onion cake should be juicy. Who wants to be served a straw-dried onion cake? Of course, lots of onions help with this. A whole kilo goes in, but sour cream and crème fraîche also contribute to the juiciness.

A vegetarian option

A little bacon mixes into the pie filling in this recipe as well. At 100 grams, actually very little. If you want, you can double or even triple the amount. But now to the vegetarians. You can either leave out the bacon, or even better, use leeks in its place. This gives the filling a little green color, tastes incredibly good and brings us very close to the filling of a Quiche Lorraine. Whereby they also work with cheese - which by the way would also be possible with this onion cake.

The perfect drink for onion cake

Well, insiders know that, of course. And everyone else after reading this post too: It's Federweißer, also known as Brauser or Rauscher. This is a wine. Well, you can't really say that. It is not a finished wine, but a product that is created when the grape juice is "on its way" to the wine. It also doesn't contain as much alcohol as regular wine. In any case, Federweißer tastes very refreshing and you don't notice the alcohol as clearly as with wine. So you have to be careful not to "tweet" too much of it.
