At a wooden table under a weeping willow, whose branches hang low, Pauline Baumberger wants to serve a wine - and reaches for a beer opener. The wine bottle is closed with a crown cork. It fizzes and then the contents, a fresh sparkling wine, bubbles into the glass. "He gusts," says Baumberger.

Gusht, pronounced "gascht", comes from English and means: He foams over! Onomatopoeic, it also goes well with what is happily throwing its bubbles, natural wine.
