Boning a bird, why should we do that? You could also ask: Why should we go to the Caribbean? The answer to both: we would get to know new worlds, splash around in Elysian lagoons, we would see a different nature, hear, smell and taste unimagined phenomena and possibly never want to go back.

This isn't an exercise, not in the "just" sense. This is an exercise, the stimulus for learning a skill that at first glance may seem like solving a luxury problem - which, of course, is not.
